Cream of Celery Soup







Cream of Celery Soup

2 Cup        celery, diced
1                onion, diced
4 Tbsp       cornstarch
4  Cup       chicken broth
3/4 Cup     skim milk
salt and pepper to taste


1. Saute celery and onion in olive oil.

2.  Whisk cornstarch into cool chicken broth until smooth.

3.  Add milk, celery and onion to chicken broth.  Heat until thickened.

4.  Season to taste. 

Serves: 5
